RECIPES |
Every visit I make to Steph’s Folk Art Studio in Pennsylvania I have to go
to The Brasserie Restaurant for their famous Tomato Bisque Soup with Croutons
and Cheese, and they have graciously shared their recipe. It may look long
but my friend Sandy Scales has made it several times and says it is quite
easy to assemble and tastes delicious. It just may be a perfect light
supper dish for the holidays, when you are tired of turkey leftovers!
This recipe makes 8 Servings
|
16-1/2" thick French bread baguette slices 1/2 pound mushrooms, sliced
Olive Oil
1/2 tablespoon chopped fresh parsley
1/4 cup plus 2 tablespoons unsalted
butter
1/2 teaspoon chopped fresh oregano
2 large tomatoes, chopped
1/2 teaspoon chopped fresh basil
1 carrot, peeled and coarsely chopped
1/2 teaspoon chopped fresh thyme
1 large celery stalk, coarsely chopped
1 cup whipping cream
1 small onion, chopped
2 cups chicken stock or canned lo-salt broth
1 garlic clove, crushed
4 ounces mozzarella cheese, shredded
1 28-ounce can crushed tomatoes with puree
8 thin slices of provolone cheese
3/4 cup tomato juice
3 tablespoons tomato paste
2 tablespoons golden brown sugar
1/4 teaspoon white pepper |
Preheat oven to 400 degrees Fahrenheit. Place bread slices on heavy large
cookie sheet. Brush both sides of bread with oil. Bake until golden brown,
about 10 minutes. Cool.
Melt 2 tablespoons butter in heavy large saucepan over low heat. Add half
of chopped tomatoes, carrot, celery and half of chopped onion and cook 10
minutes, stirring occasionally. Add garlic and sauté 2 minutes. Mix
in crushed tomatoes, tomato juice, tomato paste, sugar and pepper. Cover
and cook over low heat 1-1/2 hours, stirring occasionally.
Cool tomato mixture slightly. Puree in batches in blender. Set puree aside.
Melt remaining 1/4 cup butter in heavy large saucepan over medium heat. Add
remaining chopped tomatoes, remaining onion, mushrooms, parsley, oregano,
basil and thyme and sauté until vegetables are tender, about 8-minutes.
Mix in tomato puree and cream, soup will be very thick. Add enough stock
to thin to desired consistency. Cook until heated through, stirring frequently.
Can be made 1 day ahead. Cover and refrigerate soup. Store croutons in plastic
bag at room temperature. Rewarm soup.
Preheat broiler. Ladle soup in 1-1/2 -cup ovenproof crocks. Top each with
two croutons. Top with mozzarella and provolone cheese. Broil until soup
bubbles and cheese melts, watching carefully, about 1 minute. Serve hot.

FRESH APPLE CAKE
This quick and simple recipe comes from Louise Brown in Warren, Michigan |
2 cups sugar
1-1/4 cup salad oil
2 large eggs
3 cups flour
1 tsp salt
|
1 tsp baking soda
2 tsp cinnamon
2 tsp vanilla
3 - 4 cups apples, pared, cut into pieces |
Mix all ingredients by hand in order as they appear till well blended.
Add apples last. Mixture will be stiff. Spread in a greased 9
x 13" baking pan. Bake at
350 degrees for 50 minutes or till done. Remove from oven.
Combine 1/2 cup confectioners sugar with 1 - 2 tsp milk until
smooth. Drizzle
over cake while still warm. |

PAINTING TIPS

I use a baby monitor transmitter in my laundry room while working on the
laundry. My studio is downstairs and I can't hear when the washer or
dryer stops. So with the receiving part of the monitor in my studio
I can get my laundry done faster and can paint at the same time!

I teach pencil drawing and I have a tip for you to pass along.
Many
people do not like to wipe off their tracing paper with a towel because it
shortens the life of the paper. However, you can take a kneaded eraser
and
pat against the lines on a pattern. This will pick up some of the lines
without damaging the pattern, but there is still enough left to go by.
Do
Not rub the lines off, pat the lines. |

THIS WAS SENT TO ME BY A DEAR FRIEND AND I NEEDED IT TO BE SENT TO OTHERS. HAPPY BAKING!
Christmas Cookie Recipe
1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle Crown Royal
Sample the Crown Royal to check quality.
Take a large bowl, check the Crown Royal again, to be sure it is of the highest quality, pour one level cup and drink.
Turn on the electric mixer...Beat one cup of butter in a large fluffy bowl.
Add one teaspoon of sugar...Beat again.
At this point it's best to make sure the Crown is still OK, try another cup.. just in case.
Turn off the mixer thingy.
Break 2 leggs and add to the bowl and chuck in the cup of dried fruit
Pick the fruit off floor...
Mix on the turner.
If the fried druit gets stuck in the beaterers just pry it loose with a dewscriver.
Sample the Crown Royal to check for tonsisticity.
Next,
sift two cups of salt, or something.
Check the Crown Royal.
Now shift the lemon juice
Add one table.
Add a spoon of ar, or somefink. Whatever you can find.
Greash the oven.
Turn the cake tin 360 degrees and try not to fall over.
Don't forget to beat off the turner.
Finally, throw the bowl through the window,
Finish the bottle of Crown Royal
Make sure to put the stove in the dishwasher.
